Escoveitch Fish is a traditional Jamaican dish that is enjoyed by both locals and foreigners. The style of cooking originated in Europe/Mediterranean where it was known as ‘Escabeche’ and was then brought to Jamaica by the Spaniard. The dish can be described as being pickled since pickling was a great way of keeping food from spoiling in the days of no refrigeration. It is similar to a ceviche with the difference being that the fish is fried and not raw and served with bammy more times than not.
