Escoveitch Fish is a traditional Jamaican dish that is enjoyed by both locals and foreigners. The style of cooking originated in Europe/Mediterranean where it was known as ‘Escabeche’ and was then brought to Jamaica by the Spaniard. The dish can be described as being pickled since pickling was a great way of keeping food from spoiling in the days of no refrigeration. It is similar to a ceviche with the difference being that the fish is fried and not raw and served with bammy more times than not.

The 2013 staging of the Best Dressed Chicken Taste of Jamaica Culinary Competition was held in September over two days at the Montego Bay Convention Centre; where chefs from Jamaican hotels and cookery students participated in various categories.
