Escoveitch Fish is a traditional Jamaican dish that is enjoyed by both locals and foreigners. The style of cooking originated in Europe/Mediterranean where it was known as ‘Escabeche’ and was then brought to Jamaica by the Spaniard. The dish can be described as being pickled since pickling was a great way of keeping food from spoiling in the days of no refrigeration. It is similar to a ceviche with the difference being that the fish is fried and not raw and served with bammy more times than not. Note that Red snapper, mullet, king fish, other firm-bodied fish and even the deadly Lion Fish can be used successfully in this spicy recipe.
Escoveitch Fish & Bammy
Ingredients for Escoveitch Fish
- 1 Small onion slice or julienne
- 2 cloves chopped garlic
- 1 small carrot julienne
- 1 cho-cho julienne
- 1 piece sweet pepper julienne
- 1 scotch bonnet cut into thin slices
- 1 stalk scallion julienne
- 1 sprig thyme chopped
- ¼ cup vegetable oil
- 2 pimento berries cracked
- 1/4 cup white vinegar
- 2 tbsp. butter
- 4 snapper fillets
- Salt and pepper
Escoveitch Fish Method
- Sauté onion /garlic /carrot/cho-cho /sweet pepper /then add all remaining seasonings
- De glaze with vinegar then remove from heat and fold in butter
- Add 4 seasoned snapper fillets with salt and pepper to cook until golden brown on each side; remove from heat and pour escoveitch over fish
Ingredients for Bammy
- 3 large bammies cut into triangles
- 2 cups milk
- 2 tsp sugar
- Pinch of cinnamon
- Salt & pepper
Bammy Method
- Soak bammy in all the above mixture for about 5-10 minutes
- Fry bammy by using deep fat frying method. Fry the bammy until golden brown, then remove from oil and leave to drain on cheese cloth
